I can my cayanne peppers in a boiling mixture of about half to half mixture of vinager & water. after they age about 60 days the juice will become spicey (If you want the juice to have a kick, add a few crushed red chili peper flakes in the bottom of the jar).
I love it on my pinto beans, My mother liked it over her greens.

Oh I forgot about the big ol' pinch of salt. Ya caught me Mum.
I'm kinda new to this canning thang. Last year was my first try at it and I use way too much vinager, This years batch turned out much better. [img]eek.gif[/img]

I am in total agreement...
My favorite meal is
Pinto beans ith some sort ot smoked pork
Fried taters and onions
sliced fresh tomatoes
and cornbread YUMMM!

Got me a big ole ham bone...gonna throw it into a bunch of navy beans....make a batch of buttermilk biscuits...some slaw...and fresh home grown maders...yum...
